One of the things that actually turned out this past weekend? Impossible Vegan Pumpkin Pie, from FatFree Vegan Kitchen. As I’ve mentioned several times; I don’t like making pies because I find making rolled crusts tedious. They never seem to work out. When I saw this recipe, I knew I had to try it.
It turned out great, but I missed the texture of a crust. (Dammit!) I’ll have to find one of those crusts that you press into the pan and use this as a filling.
