Vegan poorman's mealYou could say this recipe counters my Filthy rich pasta sauce. I originally saw it in episode 3 of Great Depression Cooking with Clara. This is certainly falls under the comfort food category, and is very filling. I recommend pairing this up with a fresh salad.

Serves 2

2 to 3 cups of potatoes, diced small
1 small onion, finely diced
2 vegan sausages or 4 hotdogs, cubed (I used Yves Bavarian veggie sausage)
1 tablespoon tomato paste
Salt and pepper to taste

On medium-high heat, quickly add a generous amount of olive oil and toss in the potatoes, making sure they’re well coated. Stir for about a minute, then cover and turn the heat down to medium. You’ll need to check, stir and re-cover the potatoes every couple of minutes to avoid sticking and burning. I recommend using a metal spatula since they’ll start browning. When the potatoes start getting soft, add the onions and sausage. Cook for another few minutes then stir in the tomato paste and a splash of water. Turn off the stove at this point and season to taste. Serve with ketchup!

* The amount of ingredients can be tweaked to your preferences. The use of a cast iron pan for this recipe is personally recommended. But I’ve used a stainless steel sauté pan with good results.
