Lazy tofu sammich anyone?

This simple, yet satisfying, sammich is brought to you by laziness:

It takes a couple of slices of bread and a few 5mm thick slices of tofu. All you need to do is lightly coat each side of the tofu in a mixture of flour, nutri-yeast, salt and pepper (your choice on the proportions, I just eye-ball it) and fry em up in a pan while the bread is toasting. After the tofu’s done on the second side, you’ll want to turn off the heat and pour 1 to 2 teaspoons of tamari into the bottom of the pan. This’ll fry into the tofu surface making it yummy.

Put a bit of Earth Balance and Dijion on the toast, lay on the tofu and add sliced tomatoes. I like a good dash of salt and freshly cracked pepper too.

  1. Not a huge sandwich person, but that actually looks pretty tasty!!
