Peachy keen pancakes

Ontario peaches were recently available at the grocery store and I decided to try incorporating them in some pancakes. I used my Autumn apple pancake recipe the basis for this fuzzy fruit variation:

Peachy keen pancakes

1 peach
1 1/4 cup unbleached flour
2 teaspoons baking powder
2 tablespoons brown sugar
1/2 teaspoon salt
1 teaspoon cinnamon
2 tablespoons vegetable oil
1/2 cup water
1/2 cup soy milk
1/3 cup orange juice
1 teaspoon vanilla extract

Cut the peach in half, remove the pit and slice.

Sift together all the dry ingredients in a bowl. In another bowl, mix all of the wet ingredients well. Add wet to dry, taking care not to over mix — lumps are ok. Drop about 1/3 cup on a preheated pan and carefully place peach slices on top, lightly pushing them into the batter. Cover until the top of the pancake is a bit dry and spotted with holes then flip. I like to drip a few drops of pancake batter and oil on top of the peach slices before flipping. You can sort of sear the peaches if you’re using a cast iron pan.

Repeat til the batter’s gone, then consume with maple syrup! Serves 2 very hungry people.

Organic baskets 12 + 13 of 2010

Actually, there is no basket #12. It was collected but lost in a flurry of chaos. We moved some furniture earlier that day and completely forgot to do the last scan of the rental van before slipping the keys into the overnight drop-off box. It was a really dumb mistake, and it contained the first cantaloupe and garlic bulbs of this growing season :(

Anyway, at least basket #13 made it home today. I got potatoes, field tomatoes, lettuce, mizuna, red peppers, french & red onions. There was also a water melon. It had these funny rings on in. Not sure how that happened, but it’s kinda cute.

I roasted rings of delicata squash draped with sprigs of thyme the other day — so good! It really does taste like sweet potato, but is prettier and doesn’t need to be peeled (if organic, I’d say). This is definitely going on my “to grow” list for next year.

N & M don’t do well outside of their regular stomping grounds and would totally freak in a large open space like IKEA. But Upgrayedd? He’s young and knows no fear. He would be exploring and getting all up in your business. Being a cat person, I’m biased, but all them kitties made for a really nice TV spot. Check it out:

The first delicata squash are in and they’re quite stunning, as you can see. Actually, I have to admit that there’s no good light in the kitchen to take food pics. It’s annoying, and reminds me of this post over at thekitchn.

Other stuff in the basket: red chile & jalepeno peppers, leeks, kale, beets, and tomatoes.

I also received my special order of basil — I went for the max allowed — a whopping 600 grams. To put that in perspective for you, imagine a plastic grocery bag brimming with greenery. I packed the first 150 grams into the food processor and topped it off with a nice layer of raw cashews. While it whirled, I drizzled just enough olive oil and added salt. I was really surprised how I eye-balled everything and how it tasted really good on the first try. I didn’t need to make adjustments or anything :)

The rest of the basil will be either dried or frozen with olive oil for later use.
