Teff Peanut Butter Cookies, a recipe review

The jar of teff flour in my fridge was haunting me so I decided it was time to put it to good use: Teff Peanut Butter Cookies from the Bob’s Red Mill site. I was reluctant to make peanut butter cookies, since I’ve never met once that totally bowled me over, but what the heck.

The batter was very easy to mix together but when it came time to distribute it onto the baking sheet I didn’t know if these were supposed to be thin or thick so I did em half-half. The end result is a very sand-like cookie, which I love, so I highly suggest making mounds of dough instead of spreading it flat. It should be noted that I used crunchy peanut butter for texture, which explains the speckles of light brown in the photo.

I don’t intend on keeping teff around unless needed, but this cookie recipe is a keeper! Also, I really think teff could be used to make a kick-ass gluten free shortbread cookie. I’ll have to look out for the lighter coloured teff and eventually try this out.

  1. Now I want to go buy some teff flour. I remember sampling a teff cookie at the Jean-Talon market years ago, and it was very peculiar, but good. I’m bookmarking this recipe.
